DESCRIPTION
This diet is intended for those who have
concern about elevated blood cholesterol or triglyceride levels, or problems
related to adult-onset diabetes mellitus.
This diet is very restricted in both total
fats and cholesterol. The Standard American Diet has 42% of the calories as fat
and more than 400 mg of cholesterol, whereas this diet is 10% fat and less than
200 mg of cholesterol. This diet is very high in complex carbohydrate (75% of
calories) and natural fibers.
This diet could result in essential fatty
acid deficiency (linoleic acid) if it is sustained after a person has lost most
of their body fat stores. Symptoms of this include dry skin, eczematous skin
problems, dry hair and brittle nails. This diet will provide adequate levels of
the vitamins and minerals if unprocessed natural carbohydrate sources are used.
Problem nutrients include vitamins A and B-12, and the minerals iron and
zinc.
SAMPLE MENU FOR ONE DAY
Breakfast
- 1/2 grapefruit
- 1/2 cup cooked oatmeal
- 1 slice whole wheat bread (toasted) dry

- 1/4 cup egg substitute
- 1 cup skim milk
- Hot, non-caloric beverage
|
Lunch
- 1 cup fat-free soup, vegetable
- 3 ounces sliced turkey breast
2 slices whole wheat bread, mustard, sliced lettuce and
tomato for sandwich
- 1/3 cup cooked corn
- 1 apple
- 1 cup steamed zucchini
Dinner
- 1/2 cup tomato juice
- 1 cup brown rice
- 1 cup salad: romaine or Boston lettuce, sliced
carrots, cucumbers, mushrooms, green pepper, celery
- 2 teaspoons oil and vinegar dressing
- 1 slice whole wheat bread

- 3 ounces broiled cod
- 1/2 cup steamed broccoli
- 1 cup skim milk
- Hot, non-caloric beverage
- 4 apricot halves (non-sweetened)
